CRYSTALLINE FRUCTOSE Fructose is the sweetest of all naturally occurring sugars. It is a major constituent of many fruits, vegetables, honey, sucrose and high fructose corn syrup (HFCS). A pure form of fructose is produced by Tate & Lyle under the name of KrystarŽ crystalline fructose, and is available in both liquid and crystalline forms.
Some of the benefits of KrystarŽ crystalline fructose include increased sweetness, flavor enhancement, sweetness synergerism and humectancy while providing a clear, light mouthfeel.

GUM ACACIA Acacia is the dried gummy exudates from the stems and branches of Acacia Senegal or of other related African species of Acacia (Fam. Leguminosae).
Its major food applications include acting as a suspending or emulsifying agent, stabilizer, adhesive, flavor fixative and inhibitor of sugar crystallization. Gum Acacia is used in practically all categories of processed foods (candy, snack foods, beverages, baked goods, frozen dairy desserts, gelatins and puddings, imitation dairy products, breakfast cereals and fats and oils).
Gum acacia is also a source of soluble fiber and is generally recognized to contain 80% soluble fiber. When formulating foods or beverages with fiber, gum acacia is an excellent, cost effective option because it has minimal impact on food and beverage flavor or texture.

POLYDEXTROSE LitesseŽ is a water-soluble specialty carbohydrate which is manufactured from glucose. It is particularly valuable in the production of low calorie foods. Developed and manufactured by Danisco Sweeteners, LitesseŽ is unique in being only partially metabolized by the body. The result is that LitesseŽ contributes only 25% of the calories of sugar, and only 11% of the calories of fats. It can also improve the mouth-feel and texture of calorie reduced foods. LitesseŽ is very versatile allowing calorie reduction, sugar replacement, and fat reduction.
LitesseŽ has been labeled as fiber in a number of countries around the world for many years.
LitesseŽ is used in confections, beverages, frozen deserts, cultured dairy products, baked goods, nutrition bars and fruit spreads and fillings.

POLYOLS Polyols are sugar-free sweeteners. Polyols are considered to be carbohydrates but they are not sugars and do not have the same physiological properties as sugar. Chemically, polyols are considered polyhydric alcohols or sugar alcohols because part of their structure resembles sugar and part is similar to alcohols.
The most widely used polyols are sorbitol, mannitol, and maltitol. Unlike high potency sweeteners like aspartame, which is used in very small amounts, polyols are used in the same quantity as sucrose. In most formulations polyols can be used to replace sugars pound for pound.
Polyols are used mostly in confectionery, food, oral care, pharmaceutical, and industrial applications. Some characteristics of polyols are fewer calories, pleasant sweetness, ability to hold moisture, and improved processing. Polyols serve as humectants, bulking agents, and freeze point depressants.

ACIDULANTS/PRESERVATIVES Farbest manufactures a variety of liquid acid and preservative solutions for the food and beverage industries. Using liquid preparations instead of powders or granules shortens production time. Since it is already dissolved and easy to add, it can be sprayed as a topical solution. Examples of the items Farbest provides in solution form include citric acid, malic acid, sodium citrate, sodium benzoate, potassium benzoate, potassium sorbate, or a combination. These products typically range from 10% - 50% solids.
These solutions help to prolong shelf life by inhibiting microbial growth (select yeast, mold, and bacteria). Acidulants can contribute to flavor and assist in the preservation of foods and beverages by acting as chelators. They also optimize the preservative effect of benzoates and sorbates, which are most effective at a pH below 4.5.
